Here are some of my favorite Irish Easter
Recipes. Feel free to try them or any of my other Irish
recipes. Here's wishing you a very happy Easter.
Colored Easter Eggs
I
have found that it is best to color the Easter eggs a
day ahead to allow enough time for the eggs
to dry and cool.
1 doz. lg. white eggs, hard-boiled for
9 minutes, then rinsed
1 package Easter egg coloring kit, or
4 colors liquid food coloring
6 tsp. white vinegar
6 cups large enough to completely cover
an egg when filled 2/3 full
1 colorless or white wax crayon
While
hard boiling the eggs, fill a tea kettle with water and
bring to a boil. Place one colored tablet or
drops of liquid food coloring into each cup. There
is a color chart on the food coloring package on how to
make other colors. Pour 1 teaspoon of white vinegar
into each cup, then add boiling water to fill 2/3 of the
cup. Stir until tablets or colors disolve completely.
Working
with warm eggs, draw a design or name on each egg (one
at a time) with the crayon, then dip it into a cup. Let
the egg sit in the cup for at least 5 minutes to achieve
a brighter colored egg. The wax drawing on each egg
will prevent the color from dying that section of the surface. With
a slotted spoon or egg lifter* from the kit, remove to
a rack and dry the eggs completely. When cool,
place them in the refrigerator until served.**
*
Use a separate spoon or egg lifter for each color.
**If
the eggs are refrigerated before they cool completely,
they will sweat, forming beads of water, resulting
in spotted eggs.
